While many people would associate teriyaki with sauce, teriyaki refers to a cooking technique used in Japanese cuisine. You can break down the literal translation of teriyaki into “teri,” which describes the shine of the sauce, and “yaki,” which refers to the cooking method of grilling or broiling.
Teriyaki sauce is used as a marinade and glaze, rich in flavor that is traditionally brushed over meat several times throughout the cooking process as it gets sticky and thick. The base is soy sauce combined with mirin, sugar, and sake to give a flavorful, punchy result. Many different versions of teriyaki sauce are available with additional ingredients like ginger or garlic, and you can use any of these for grilled teriyaki shrimp.
Teriyaki is versatile and popular and is used as a cooking style for many types of meat, including pork, beef, and chicken. This quick way of cooking is perfect for seafood recipes like our grilled teriyaki shrimp. For the best results, continue to baste the shrimp and scallop skewers as you turn them for maximum flavor.
